HEALTHY pulled pork and pineapple pizzas? There’s no such thing… WRONG!! We made these delicious pizzas with tortilla wraps, tinned tomatoes, pulled pork, fresh pineapple & mozzarella, each with the same amount of calories as just one slice of a large takeaway pizza approx. What?! YUM!! 😍

We honestly never get takeaway pizza anymore because these pizzas are just so good. We’ll usually keep them for a Friday night as a treat 🍕
We get the BBQ pulled pork in a tin from the butchers (usually Nyhan Bros in Dundrum Town Centre) It costs about €9. I cooked it in the oven at about 150 degrees on a fan oven, for an hour and a half. I covered it with tin foil and took off the foil for the last 15 minutes of cooking to give it some crispiness. I also turned the heat up to 200 degrees for these last 15 mins of cooking 👌
I then put the pork out onto a plate and shredded it up using two forks. Some of the pork will be fatty and these are the bits you don’t want. Just the meaty bits.. We fed five people with this pork last night and we still have some leftover so you get loads out of it 👍
These pizzas are so cheap & simple to make and so quick. I love these after a late gym session or even before I’m rushing out the door because they’re just so handy.
Here’s how easy it is:
Get a tortilla wrap. I use the Mediterranean ones from Lidl. Spread one tablespoon of chopped tomatoes on for the sauce, but don’t go out as far as the edges because this will be the crust. Spread out a generous handful of pork around the pizza, then the chopped pineapple and some sliced mozzarella (the fresh ball of mozzarella you buy in the packet). Now add a few spinach leaves. Pop in the oven for 10 minutes and enjoy!! The pork goes even crispier in the oven and you can really taste the BBQ sauce of it. Delicious!! Trying not to drool here 😂
