Mexican recipe: Delicious & Healthy Turkey Mince & Chorizo Tortillas with Black Beans

Happy Saturday Everybody!! 

I’m so happy this weekend and so excited to have a cheat day tomorrow with loads of chocolate! I’ve cut down on chocolate big time over the last 5 weeks so it will be the best treat 😍 

Last night I posted a photo of the Turkey Mince & Chorizo tacos we had and they were a big hit. Here’s the recipe as promised… What I love about this one is that you could leave out the turkey mince to make it a veggie one πŸ‘Œ


What you’ll need: 

1 pot

2 pans – one for cooking the turkey mince and one for toasting the tortillas 

Lean turkey mince – we buy ours from Dublin Meat Company in Stillorgan. You’d feed 4 people out of one pack of this which is €5. They have every type of meat you can think of and some delicious dishes made up. Check out the website here, where you can also buy meat online. In terms of value for money they can’t be beaten. 

1 avocado 

Half a red onion 

2 cloves of garlic 

1 lime 

Hot salsa – we love this one & buy it of course at Picado. You can buy it online here.

Mexican tortillas which we also buy from Picado Mexican. 

Tub of half fat Creme Fraiche – we got this in Tesco 

1/4 brown onion 

Tub of cherry tomatoes πŸ… 

Fresh coriander 

Paprika 

Hot chilli powder 

Black beans 

2 slices of chorizo 

It will take you about 20 minutes to make this but you’ll need to cook the black beans in advance if you’re boiling them from scratch. 

How to make this tasty dish, based on a portion for 2-3 people: 


Pop one cup of black beans into a pot and cover with about 500ml of water. Bring to the boil and then let simmer for about 40-50 minutes. 

Start chopping up your 2 garlic cloves, dice both red and brown onions, chop avocado into small chunks, chop about 6 cherry tomatoes into tiny pieces and chop a small handful of coriander into little bits. 

Add the white onion, half the cherry tomatoes and half the coriander into a bowl. Add a squeeze of juice from the lime and mix. Pop into the fridge. 

Grab another bowl – add the chopped avocado, rest of the cherry tomatoes, half the garlic, rest of the coriander, the red onion and a squeeze of lime juice and mix around. Make sure you use ripened avocados or this won’t give you the creamy effect you want. Hass avocados are the best and we usually just buy these in Lidl. Pop this into the fridge too.

​Put about a teaspoon of coconut oil (get it in Aldi for €4) into one of the saucepans. Add the turkey mince and break into pieces. Turn on the pan as it cooks. Use a low heat and try not to let the mince brown too much. Cut up the chorizo into tiny bits and add to the mince for flavour πŸ‘Œ Add 1/2 tablespoon of hot chilli powder and 1/2 tablespoon of paprika and mix. Add the rest of the chopped garlic in now. 

Use the other pan to toast your tortillas. You don’t need any oil here just pop them on the pan on a medium heat. After about five minutes turn them over to toast the other side. 

All that’s left to do now is serve your yummy tacos with toasted tortillas, turkey & chorizo, guacamole, tomato & onion salsa, Muy Picante salsa and creme fraiche. Drain your black beans, rinse them and serve.
