So tonight we made (when I say we I mean my boyfriend AKA amazing chef) Cajun turkey burritos with kidney beans, served with homemade Guacamole and feta dip.
Here’s the delicious recipe. It’s so easy:
First fry 2-3 turkey breasts in coconut oil on a pan. Season them with cumin, paprika and cajun spices.
To make the feta dip firstly put 4 tablespoons of Greek yoghurt into a bowl, then add thinly chopped bits of feta cheese, a few chopped fresh coriander leaves and a sprinkle of black pepper.
To make the guacamole chop up 2 avocados into small chunks and add to a bowl. Add about 5 chopped cherry tomatoes, one diced red onion, 1 chopped clove of garlic and juice of 1 lime. Mix together.
Mix half a tin of kidney beans with chopped cherry tomatoes and heat in the microwave for three minutes on a low temp.
Cut up the turkey steaks thinly and add to a wrap. Throw in your guacamole, kidney beans and feta dip, wrap it and tuck in. Serve with guacamole and feta dip on the side.
This only takes 20 minutes to cook so it’s handy for after the gym. Add rice for a post workout meal.
