The Body Coach recipe for Chilli con Avocado

This is one of my favourite delicious healthy recipes from The Body Coach’s first book.

I love the Body Coach’s plan – there’s some delicious meals and you can still lose weight. It’s all based around doing HIIT workouts. I have both books so I’ll post up loads of the recipes over the next while. It’s very hard to keep to it coming up to Christmas though!

Here’s what you’ll need: 
1/4 tbsp coconut oil
1 small red onion, diced
1 green chilli finely chopped with seeds removed
1 red pepper
1/2 courgette, diced
300g reduced-fat beef mince
1 tsp smoked paprika
2 tsp ground cumin
1 tbsp full fat Greek yoghurt
1/2 ripe avocado, sliced
1/2 bunch of coriander leaves chopped

Heat the coconut oil in a large frying pan. Add the onion, chilli, pepper and courgette and stir-fry for 1-2 mins. Add the beef mince and stir to combine with the other ingredients. Keep frying for a few minutes until the mince is fully cooked. Add the paprika and cumin and stir. Serve the chilli on a plate and top with the yoghurt, avocado and coriander.

Delish!! This is a reduced carb meal so eat this when you haven’t worked out.

Buy most of these ingredients in Lidl to keep it cheap and make sure you get a soft avocado that’s ripe.
